Sunflower oil is, by most market estimates, the most widely consumed refined edible oil in Indian urban households today. It is quite a new development. About twenty-five years back, either groundnut oil or coconut oil was used in households in India based on geographic areas. Raw or crude sunflower oil in India goes through several stages before it reaches the cooking oil you buy: degumming, neutralisation, bleaching, and deodorisation. Each step removes something free fatty acids, colour pigments, odour compounds. The end result is a pale, bland oil that won’t interfere with the taste of food.
However, the disadvantage of refinement is that it eliminates certain naturally occurring antioxidants and other small amounts of nutrients. This explains why unrefined or cold-pressed sunflower oil is available in the health food category and priced a bit higher. Refined sunflower oil can be used for all normal cooking purposes. How and Where to Use Sunflower Oil- And Where Not to
Due to its neutral taste, sunflower oil can be used in all kinds of cooking. It is used in baked goods where you don’t want the taste of oil to dominate the taste of food, it is used in dressing and marinades, in sautéing and also used for frying (smoke point of 220-230 degree centigrade).
However, it is not recommended for multiple deep frying because, due to high percentage of polyunsaturated fats and mainly because of high percentage of linoleic acid, it oxidises faster compared to monounsaturated fat containing oils such as groundnut oil and olive oil. In case of commercial frying processes, this causes an increase in cost of operation.

In terms of manufacturing, sunflower oil finds great use in the manufacture of processed foods such as chips, biscuits, pasta, sauces, mayonnaise, and margarine, where refined sunflower oil and blends are used. This is because sunflower oil does not add any flavour profile to the products, making it ideal as a base oil according to food technologists.

- Peroxide Value- indicates oxidative freshness
